Salt and Flame Catering practices sustainability in various
aspects of the kitchen. Our approach to
food and health is distinctively intermingled with our strategy of preserving,
protecting, and enhancing our environment.
Here in our kitchen we have taken tangible, enduring steps to insure
that we are doing our part for the local community.
As we cater several weddings, business events, and parties, we like to “give back” by using local farms, Purchasing 4-H animals, gardening, recycling, and composting. We have established great relationships with our local businesses and social neighbors throughout the years.
Dancing Cow Farms, Yamhill Farms, and Carlton Farms are some our local favorites just to name a few. Jerre Kosta and Sean Dodson from Dancing Cow Farms have been growing organic vegetables and raising rare Irish Dexter Cattle, 6-horned Jacob Sheep, Icelandic Horses, Lavender Guinea Fowl, Heritage Turkeys, Indian Runner Ducks and a variety of Heritage Chickens since 2002. We share the belief that healthy foods begin with healthy soils, and we are proud to work with them.
The main bulk of our proteins for the kitchen are purchased from 4-H programs, a camp where children and young adults help raise and care for animals that are later sold to the public. It is the final step in their livestock project where educational marketing aspects come to life. For years we have supported the Deschutes and Crook County 4-H and FFA livestock auctions.
In most operations, kitchens produce the most garbage of any other department. That is why our recycling regimen is always above and beyond. We recycle plastics, metals, glass, and papers, but go further by reusing as many empty containers as possible for leftover food storage. When needed, we by bulk food and products that utilize reduced packaging, as well.
We are proud of the contributions we make on a daily basis. By doing so, our vision of a secure and bright future will be a reality.
